ingredients

Pancake dough (for about 25 pieces)
150 g Francine cake flour
5 cl of milk
3 eggs
100 g caster sugar

Garnish
Fruit of the undergrowth: 200 g of blackberries 200 g of wild strawberries 200 g of blueberries
60 g of brown sugar

Cream with spices
120 g of mascarpone
80 g vanilla custard
1 pinch of 4 spices mixture
Pepper
1 pinch of cinnamon

Steps

Step 1

For small pancakes
In a bowl, mix the Francine cake flour with the milk and the 3 egg yolks in the snow, add 100 g caster sugar, then add the first preparation and mix.

In a frying pan over high heat, pour a little oil, then a small ladle of dough to form a small pancake. Let the pancake cook for 2 or 3 minutes over low heat, then return and cook as much on the other side. Repeat the process until the dough is used up. Let the pancakes cool down at room temperature.

2nd step

Fruit of the undergrowth
Wash then scrape all the red fruits. Drain well on paper towels. Divide into 2 all the fruits by reserving the most beautiful for the finish. In a saucepan, melt the sugar over low heat with 2 tbsp. of water. Throw in the first part of the red fruits. Simmer 6 to 8 minutes. Drain the fruit then reduce the juice over low heat to obtain a syrupy consistency. Add the fruits and cool the mixture.

Step 3

Cream with spices
Drain the flan with vanilla, put in a bowl. Add a pinch of cinnamon, a pinch of 4 spice mixture and 3 rounds of pepper mill. Add the mascarpone and whip it all over energetically to obtain a smooth cream.

Step 4

Dressage and finishing
Arrange 1 thick pancake on a plate. Make a dumpling of spice cream. Add a little cooked red fruit and decorate with the reserved fruit for the finish.
