ingredients

2 yolks 2 egg whites
25 cl of milk
50 g 50 g of sugar
10 g icing sugar
½ cuil. to c. vanilla powder

Equipment

1 saucepan
1 salad bowl 1 hand whip
1 electric whip plunger
1 microwave
1 nice salad bowl to serve

Steps

Step 1

Prepare the custard: heat milk and vanilla. At the same time beat egg yolks and 50 g sugar in the bowl; pour the hot milk while turning. Heat in saucepan over low heat, stir constantly. As soon as the foam disappears, pour into the salad bowl. Let cool.

2nd step

Prepare the snow: whip the whites into very firm snow. Add the icing sugar, beat again. With a spoon, place large balls of snow on a plate. Microwave cooking, 20 sec at max power; open the door, close, cook another 10 s. Put on the cream.

Step 3

To serve: heat sugar and a little water until you get a toffee. Take off the fire, wait 1 min. Then place the pan 30 cm above the whites, run the caramel by moving it to form threads.

tips

Sophie's ideas. Sow on the whites, before serving: pralines, raspberries or chocolate chips. Snow eggs can be prepared 24 hours in advance.
