Tapenade, an olive puree very rich in minerals
The tapenade is a puree of olives of Provencal origin. It is made from olives (green or black) crushed and mixed with olive oil and, according to recipes, capers or anchovies, lemon juice, garlic, pine nuts etc. Olives are known for their beneficial actions at the cardiovascular and digestive levels as well as for their antioxidant properties.
